From the union between Barbera and Croatina, coming from the oldest vineyards, in limited production
and selected, Gutturnio Superiore is born.
A perfect marriage between the two Piacenza red grapes par excellence, Barbera and Croatina
gives rise to a perfectly balanced wine with great longevity.
The harvest, which takes place in the first half of September, still takes place
manually, the varieties are vinified separately, for the different ripening periods,
even if they diverge only by a few days.
The grapes are destemmed and fermented in small concrete tanks at natural temperature
between 30° and 34° C.
The maceration lasts from 15 to 20 days, with frequent pumping over, to allow for a perfect finish
extraction of tannins and coloring substances from the skins.
The fermentation is then followed by an aging of about 10 months in cement tanks before being
bottled, this wine vessel allows a micro-exchange of Oxygen, which favors
maturation and natural refinement of the wine.
It is put on the market after at least 18 months of aging in the bottle.
